Black glutinous rice (紫糯米, also called purple sticky rice) is slow-cooked until completely soft, then blended thoroughly into a smooth, deep-purple flowing porridge that meets IDDSI Level 3. The natural starches in black glutinous rice create a cohesive, velvety consistency after blending that requires no thickening agents. Black glutinous rice is notably rich in anthocyanins — the antioxidant pigments responsible for its deep purple colour — making this a nutritionally meaningful option alongside its cultural familiarity as a Cantonese traditional food.

Method

  1. Rinse the black glutinous rice thoroughly until water runs mostly clear. Soak in cold water for at least 4 hours, or overnight in the refrigerator. Drain before using.
  2. Place the soaked rice in a pot with 900ml fresh water. Bring to a boil over high heat, then reduce to the lowest possible simmer. Cover with the lid slightly ajar and cook for 30–35 minutes, stirring every 10 minutes to prevent sticking, until the rice is completely soft and the grains have split open.
  3. Add the rock sugar and stir until fully dissolved. Taste and adjust sweetness.
  4. Remove from heat. Using a stick blender, blend thoroughly in the pot for at least 90 seconds. For the smoothest result, transfer to a high-powered blender and blend until completely uniform.
  5. Check consistency by tilting a loaded spoon — the porridge should flow freely, similar to a thick soup. If too thick, add hot water in small increments and stir. If not completely smooth, continue blending or strain through a fine-mesh sieve.
  6. If using coconut milk, stir in just before serving. Serve immediately, or keep warm and recheck consistency before serving.

Texture Test

Flow test: Passes Level 3 — tilting a loaded spoon allows the porridge to flow freely and spread flat in the bowl within 5 seconds. No fixed shape maintained.

Particle check: After blending, no rice grains, husks or solid particles are visible or palpable. If any texture is detected, strain through a fine sieve before serving.

Colour uniformity: A uniformly blended porridge appears as a consistent deep purple with no lighter or darker patches, indicating thorough mixing.

Safety Notes

⚠️ Blend very thoroughly — black glutinous rice has a tougher husk than white rice and requires extended blending. Blend for at least 90 seconds with a stick blender; a high-powered countertop blender is preferable. Strain through a fine sieve if any texture remains.

⚠️ Recheck consistency after coconut milk — adding coconut milk changes the texture slightly. Recheck flowability after each addition using the tilting spoon test before serving.

⚠️ Monitor thickening — the high starch content of glutinous rice means the porridge thickens significantly as it cools or sits. Recheck and adjust with hot water immediately before serving every time.
