Method

  1. Remove silken tofu from packaging; gently pat dry with kitchen paper and cut into small cubes approximately 1cm thick and no larger than 15×15mm
  2. Arrange tofu cubes in a single layer in a heatproof bowl
  3. Beat the egg and gently stir in the chicken stock, being careful not to create bubbles
  4. Strain the egg mixture through a fine sieve, then pour slowly over the tofu cubes
  5. Cover the bowl loosely with cling film, leaving a small gap for steam to escape
  6. Bring a steamer to a full boil over high heat, then reduce to medium heat and steam for 12 minutes until the egg is just set but still tender
  7. Remove from steamer; drizzle with soy sauce and sesame oil to serve

Texture Test

Fork pressure test: Passes Level 5 — tofu cubes can be easily separated with the side of a fork; the steamed egg portion deforms under gentle pressure. The dish retains shape (not pureed), is moist throughout, and flattens completely without springing back when fork pressure is applied. Ensure no tofu cube exceeds 15×15mm.

Notes

IDDSI Level 5 requires food that holds its shape but softens easily under tongue pressure or fork pressure. Both the tofu cube size and the steamed egg texture in this recipe meet this standard. Do not use firm or extra-firm tofu — Japanese silken tofu (kinugoshi) is essential for achieving the correct texture.

Storage

Best eaten immediately after steaming. If preparing ahead, cut the tofu and mix the egg liquid in advance, then assemble and steam within 15 minutes of serving.

Nutrition

Approximately 150 kcal and 13g protein per serving, with around 200mg calcium. Both silken tofu and egg provide complete protein; the calcium content supports bone health in elderly people. The low-sodium recipe is suitable for those managing hypertension or kidney conditions.
