Tomato and Egg Stir-fry | IDDSI Level 5 Care Food Recipe

Ingredients (1 serving)
- 2 eggs
- 1 medium tomato (approximately 150g)
- 1 teaspoon cooking oil
- Pinch of salt
- 1/4 teaspoon sugar
- Cornstarch slurry: 1 teaspoon cornstarch + 2 teaspoons water
Method
- Peel tomato (blanch in hot water for 30 seconds to remove skin easily), dice finely (no larger than 4Γ4mm)
- Beat eggs with a pinch of salt
- Heat wok, add oil, pour in egg mixture, stir-fry until just cooked (do not overcook), remove
- In the same wok, stir-fry tomato pieces until juicy (approximately 2 minutes)
- Season with salt and sugar
- Add cornstarch slurry to slightly thicken the sauce
- Return eggs, gently mix and serve
