Ingredients (1 serving)

  • 2 eggs
  • 1 medium tomato (approximately 150g)
  • 1 teaspoon cooking oil
  • Pinch of salt
  • 1/4 teaspoon sugar
  • Cornstarch slurry: 1 teaspoon cornstarch + 2 teaspoons water

Method

  1. Peel tomato (blanch in hot water for 30 seconds to remove skin easily), dice finely (no larger than 4×4mm)
  2. Beat eggs with a pinch of salt
  3. Heat wok, add oil, pour in egg mixture, stir-fry until just cooked (do not overcook), remove
  4. In the same wok, stir-fry tomato pieces until juicy (approximately 2 minutes)
  5. Season with salt and sugar
  6. Add cornstarch slurry to slightly thicken the sauce
  7. Return eggs, gently mix and serve
