Ingredients (2 servings)
- 200g pumpkin (peeled and deseeded)
- 3 tablespoons single cream (or full-fat milk as substitute)
- 1 teaspoon unsalted butter
- Pinch of white pepper
Method
- Cut pumpkin into small pieces and steam for 15 minutes until completely tender
- While hot, blend to a very smooth purée
- Add cream and butter, blend for another 10 seconds
- Taste and adjust — add a little hot water or milk if too thick
- Strain through a sieve to ensure even texture
