Ingredients (2 servings)

  • 200g pumpkin (peeled and deseeded)
  • 3 tablespoons single cream (or full-fat milk as substitute)
  • 1 teaspoon unsalted butter
  • Pinch of white pepper

Method

  1. Cut pumpkin into small pieces and steam for 15 minutes until completely tender
  2. While hot, blend to a very smooth purée
  3. Add cream and butter, blend for another 10 seconds
  4. Taste and adjust — add a little hot water or milk if too thick
  5. Strain through a sieve to ensure even texture
