Steamed Fish with Broccoli Purée | IDDSI Level 5 Care Food Recipe

Ingredients (1 serving)

Method

  1. Cut broccoli florets into small pieces (approximately 3mm), steam for 8 minutes until soft
  2. Mix fish paste with a small amount of cornstarch and water, form into small balls (approximately 1cm diameter)
  3. Bring chicken stock to a boil, add fish balls, cook until done (approximately 5 minutes)
  4. Add broccoli pieces
  5. Thicken slightly with cornstarch slurry to keep food moist
  6. Ensure all pieces are under 4mm

Texture Test

Fork pressure test: Passes Level 5 — fork side easily separates pieces; moist throughout

Notes

Use only broccoli florets — stems are too firm for Level 5. Fish balls must not exceed 1cm diameter.

Safety Note

⚠️ Always check for fish bones before serving. Fish bones are one of the highest-risk foods for dysphagia patients. Commercial fish paste should be bone-free, but always verify.
