Black Sesame Porridge | IDDSI Level 4 Care Food Recipe
IDDSI Level 4 | 20 minutes | Easy
Ingredients (2 servings)
- 50g black sesame powder (commercial instant or freshly ground)
- 20g glutinous rice flour
- 30g sugar (brown sugar recommended)
- 250ml full-fat milk
- 250ml water
Method
- Mix glutinous rice flour with a small amount of cold water (approximately 50ml) until no lumps remain
- Pour milk and water into a pot, heat over medium until warm (do not boil)
- Add black sesame powder and stir until combined
- Add sugar and stir until dissolved
- Slowly pour in glutinous rice flour mixture while continuously stirring
- Continue cooking over medium-low heat, stirring constantly, until porridge is smooth and thick (approximately 10 minutes)
- Remove from heat, allow to cool slightly before serving
Texture Test
Syringe flow test: Passes Level 4 — less than 8ml flows from 10ml in 10 seconds (slow flow rate)
Spoon test: Porridge holds shape on a spoon and slides off slowly when tilted
Consistency adjustment: If too thin, add 5g more glutinous rice flour mixture; if too thick, add a little hot water
Nutrition
Approximately 280 kcal per serving, rich in calcium (from sesame and milk). Black sesame is high in iron and Vitamin E.
For lactose intolerance: substitute unsweetened soy milk for cow’s milk.
